Happy 4th of July! Hopefully you have been enjoying a fantastic day filled with relaxation and fun!... however today has felt very strange as it is Wednesday and having the day off in the middle of the week is just odd! Knowing you have to go back to work tomorrow makes things a little less celebratory.
Ah well, we certainly made the most of it! Husband and I had dinner with friends last night and then headed out for drinks with another group of friends.
There certainly is nothing like a Tuesday evening that feels like a Friday... it was an amazing feeling knowing that we didn't have to wake up too early the next morning! Life has been emotionally draining as of late due to everything going on, so sleep has been hard to come by. Waking up this morning well rested was just what the doctor ordered!
But waking up late and the gym being closed for the holiday was NO excuse to miss a workout... so I banged out a 30 minute boot camp in my living room, and almost died, ha!
This crazy heat and humidity is deadly even with the airconditioning on full blast. A shower was very much welcomed after that workout... but, unfortunately it didn't keep me from continuing to sweat.
After standing in front of the airconditioner for a while, I whipped up some easy Single Serving Banana Bread Protein Pancakes from Peanut Butter Fingers. Let me tell you, they were AMAZING! and very filling too! This will certainly become a morning staple in my house... who would have thought using cottage cheese in pancakes would be good, but I am hooked already!
After breakfast, Husband and I spent sometime outside, trying not to melt...
It was crazy hot out there and I felt like I needed another shower from just walking around running some errands. Stopping for water and a blast of AC every once in a while was a must!
So after a morning and afternoon full of sweat, Husband was nice enough to whip up some Frozen Strawberry Margaritas to celebrate this wonderful holiday - Thanks sweets! They were delicious :-)
And yes, I have been lacking in the new recipes, but I promise I will be back tomorrow with a new one... I have been spending a lot of time in the kitchen and Husband has been tasting up a storm, so GET EXCITED!
